Super Simple And Healthy Chocolate Chip Cookies

I know, healthy and simple isn't usually how we describe chocolate chip cookies, but these cookies are just that. These gluten free, low glycemic, heart healthy cookies are sure to be a family favorite. My husband, who doesn't typically like it when I attempt to "healthify" junk food, even requested that I keep these cookies coming! Enjoy!

Healthy Chocolate Chip Cookies  

 1 cup almond butter (or any nut butter) 

1 egg

1 tsp. vanilla (optional) 

1/3 cup coconut sugar

1 tsp. baking soda  

3/4 cup Dark Chocolate Chips

* Combine all ingredients then add your chocolate chips. Form into small balls. Bake at 350° for 10 minutes.   Let them cool for 20-30 minutes, then eat up!
