Sweet Potato Quinoa Pot Luck

I am happy to share one of my all-time favorite dishes.  You can eat this as a stand alone meal or add to a family-sized salad.

2 cups quinoa
4 cups broth or water
*Bring to a boil then cover and simmer for 20 minutes.

  • While the quinoa is simmering, toss mushrooms and onions together and bake for 15-20 minutes at 350 degrees.
  • Chop precooked chicken and precooked sweet potatoes (you can also use butternut squash).
  • Once the quinoa is cooked, add all in ingredients together, stir, and sprinkle with fresh Parmigiano-Reggiano cheese.  VOILA!
